In this article, I will give you a quick and simple recipe for making stuffed cabbage at home.
Ingredients
- 1 cup rice (e.g., basmati)
- 1 whole cabbage
- 500g ground meat
- 10g parsley
- 10g green coriander
- 5g dill
- 1 medium-sized onion
- 1 medium-sized carrot (grated)
- 1 medium-sized green bell pepper
- 5 cloves garlic (minced)
- 3 tsp raisins
- 3 tsp white vinegar
- 2 tsp tomato paste
- ¼ cup cooking oil (olive oil)
- ½ cube vegetable stock
- ½ tsp black pepper (powder)
- ½ tsp coriander powder
- Salt to taste
Instructions
First, rinse 1 cup of rice thoroughly. In a pan over low heat, mix ¼ cup of water with ½ cube of vegetable stock, then add the rice and 2 tsp of olive oil. Let it boil for 5 minutes, then set it aside to cool.
Separate the cabbage leaves carefully to avoid tearing them. Wash the leaves well, then place them in a pan with enough water to cover them. Boil for 20 minutes, then turn off the heat and let them cool in the water.
Finely chop the onion, parsley, carrot, green bell pepper, coriander, and dill. In a large bowl, mix the ground meat, half-cooked rice, chopped vegetables, and minced garlic. Add black pepper, salt, coriander powder, raisins, and white vinegar. In a small cup, mix ¼ cup of cooking oil with 2 tsp of tomato paste and ½ cube of vegetable stock. Stir until well combined and add it to the mixture. Mix thoroughly with clean hands, then add the grated carrot and mix again.
Take a cabbage leaf and trim the hard stem at the back without tearing it. Place 1 ½ tsp of the filling in the center. Fold the sides of the leaf towards the middle and roll carefully. Repeat for all leaves.
Arrange the stuffed cabbage rolls in a large pan in a circular pattern. In a cup, mix 2 tsp of tomato paste, 3 tsp of cooking oil, salt, ½ tsp coriander powder, ½ tsp black pepper, and ½ cup of water. Stir well and pour over the rolls. Cook on low heat for 30 minutes, checking occasionally and adding water if needed. Avoid stirring to prevent breaking the rolls.
